Jeyuk bokkeum (제육볶음), also known as dweji bulgogi (돼지불고기), is a spicy marinated pork dish that is popular in Korea. It is my son’s absolute favorite! He loves the fatty pork and the spicy flavor of the dish. This dish is perfect for him whether you are grilling outdoors or stir-frying it for an easy dinner.

If you like spicy pork cuisines, then the Jeyuk Bokkeum is a must-try for you. This dish is the spicy version of Bulgogi and is also commonly served in many Korean restaurants.

4 tbsp gochugaru, Korean red pepper flakes or regular red pepper flakes
2 tbsp mirin
3 tbsp soy sauce
1 1/2 tbsp fish sauce
2 tbsp maesilaek, Korean plum extract or apricot jam
2 tbsp sugar
1/4 tsp black pepper
10 cloves garlic, chopped
1 1/2 lb pork butt, shoulder or belly, thinly sliced
1 large onion, sliced
1 tbsp cooking oil
4 green onions, cut into 2-inch long pieces
1 red or green chili, optional
Sesame seeds, sesame oil


The Marinade

Unlike its beef counterpart, pork is more commonly marinated in a spicy gochujang based sauce with lots of fresh garlic and ginger. It’s spicy but not overly spicy. The spicy marinade works well with fatty pork.
Jeyuk bokkeum is usually made with a combination of gochujang and gochugaru. You can omit gochugaru if you like it less spicy or add more to make it spicier. And you can constantly adjust the heat level to your taste.

Cooking Spicy Korean Pork

  1. In a large bowl, combine gochugaru, mirin, fish sauce, soy sauce, maesiaek, sugar, black pepper and garlic.
  2. Let the mixture sit for 5 minutes to allow the gochugaru to absorb the moisture from the sauces and become a thick, pasty sauce.
  3. Add pork and onion, mix well with your hand. Let it marinade at least 30 minutes to overnight. Thicker the meat, longer marinate time.
  4. Heat a large skillet over high heat, add cooking oil.
  5. Add the marinated pork and cook until the pork is fully cooked and onions are softened about 7 to 9 minutes.
  6. Now add the green onions and chili.
  7. Cook for an additional minute, then remove from heat.
  8. Plate and garnish with sesame seeds and a touch of sesame oil.
  9. Serve with warm rice, some lettuce for lettuce wraps, and other Korean sides! I recommend kimchi, soy bean sprouts, and spinach side dishes!

How to serve Spicy Korean Pork

You can enjoy this dish with a bowl of rice and other side dishes, or wrapped in leafy vegetables like red or green leaf lettuce and/or perilla leaves (kkaennip, 깻잎), along with ssamjang (쌈장). Crown daisy (ssukgat, 쑥갓) is a great vegetable to add to your wraps, if available.
