If you haven’t tried grilled scallops, then you are missing out. Scallops are mollusks that can easily be purchased in many grocery stores or your local fish market. It has a slightly sweet and salty taste with a melt-in-your-mouth buttery texture. Although scallops can be expensive, trying them once will surely level up your K BBQ experience.

How to make Grilled Scallops

Scallops can be marinated with many kinds of spices and flavorings, depending on your preference. We like marinating scallops with some lemon, olive oil, minced garlic, and a pinch of salt and pepper before grilling. But if you feel a little extra, you can marinate your scallops with honey, olive oil, garlic, lemon juice, and Spanish-smoked paprika.

After marinating your scallops for one hour, they should be ready for grilling. Once your scallops are ready, pour some oil into your grill and place your scallops over the hot surface. Grill for 2 to 3 minutes on each side and enjoy! To grill scallops, you can opt to use a skewer to hold the scallops together or grill them separately.

Ingredients

  • 20 sea scallops, large
  • 1/4 cup olive oil, plus more for the grill
  • 1 tbsp honey
  • 2 tbsp lemon juice
  • 2garlic cloves, minced
  • 2 tsp smoked paprika
  • 1 tsp salt
  • 4-5 Skewers (if using wooden, presoaked in warm water for 1 hour)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, combine 1/4 cup of olive oil, honey, lemon juice, garlic, smoked paprika and salt. Whisk until honey dissolves. Set aside.
  2. Place the scallops and the marinade in a large ziplock bag, seal it shut and refrigerate for 1 hour.
  3. If you are using wooden skewers, soak them in warm water for the hour that the scallops are marinating.
  4. Heat grill to medium-high heat. Cover the grill so the grates get hot.
  5. Remove the scallops from the refrigerator, slide 4-5 each onto the skewers and season with salt and pepper.
  6. Using a silicone brush, oil the grill grates with extra oil.
  7. Place the skewered scallops on the grill at an angle (if you want pretty diagonal grill marks).
  8. Cook scallops for 2-3 minutes on each side.

Tips for Perfect Scallops

  • Thaw frozen scallops in the refrigerator and drain any liquid. Dab them dry before marinating.
  • Choose uniformly shaped scallops so they cook at the same rate.
  • Do not overcook. Scallops should be opaque, firm, and lightly browned on the edges.

Cooked scallops will keep in the refrigerator for about 3 days. The best way to reheat them is to heat a little olive oil in a saute pan over medium heat, so they reheat slowly. This prevents them from becoming tough.
