Ingredients

4 large Idaho or russet potatoes, cut into wedges
2 tsp. garlic powder
1 tsp. kosher salt
1 tsp. freshly ground black pepper
1/2 c. extra-virgin olive oil
2 tbsp. freshly chopped herbs (such as parsley)

Instructions

  1. Bring a pot of well-salted water to a boil, then add your potatoes and cook until al dente, 5 to 7 minutes.
  2. Drain and let them cool slightly before serving.
  3. Grill should be heated to medium-high and grates oiled.
  4. Mix together garlic powder, salt, and pepper in a large bowl, then stir in olive oil.
  5. Add potatoes and toss gently to coat.
  6. Remove potatoes from oil and reserve excess oil in bowl.
  7. Grill potatoes, flipping once, until golden brown, about 5 minutes.
  8. Add herbs to reserved oil mixture, then return potatoes to mixture and toss again.
  9. Enjoy!
