Grilled Bison Burger

Ingredients

1 pound Ground Bison

3/4 teaspoon salt

1/2 teaspoon pepper

1/4 cup finely chopped onion or shallot

1–2 fat clove garlic cloves, finely minced

2 teaspoons stone-ground or dijon mustard

1 tablespoon fresh thyme (or 1 teaspoon dried thyme- or sub-dried Italian herbs)

1 tablespoon olive oil, optional, but adds moisture.

Optional Smoky Aioli:

3 tablespoons Mayo

2 teaspoons stone-ground or dijon mustard

1/2 teaspoon smoked paprika

Ingredients (optional): Serve with your favorite fixings- grilled onions, buns, mayo, mustard, bbq sauce, tomato, lettuce, fermented pickles, pickled onions, melted cheese, etc.

Notes

If you don't have a grill, don't worry – we can also cook the bison burgers in a greased skillet or grill pan on the stovetop. Just make sure not to overcook them, as they can dry out quickly since they're lower in fat.
